Ingredients

  • 1 oz fresh lime juice
  • 0.75 oz cherry syrup (or muddled cherries with simple syrup)
  • 4 oz lemon-lime soda or soda water
  • Pinch of salt
  • Lime wheel and 2 cherries, to garnish

Method

  1. 1Fill a tall glass with ice.
  2. 2Add the lime juice, cherry syrup and salt.
  3. 3Top with soda and stir once from the bottom.
  4. 4Garnish with a lime wheel and cherries.

Notes

  • Make cherry syrup by simmering a cup of pitted cherries with half a cup of sugar and a splash of water for ten minutes, then straining.
  • Fresh lime, not bottled — this drink is mostly lime.
  • The pinch of salt is what stops it tasting like a soft drink.

Make one of these next

  • Egg Cream

New York's soda-fountain classic. No egg, no cream — and the pouring order is the entire recipe.

  • Lemon, Lime and Bitters

Australia's default non-alcoholic order, and the most-ordered mocktail in the world. Three ingredients, one technique.

  • Pink Lemonade

Coloured with real fruit rather than syrup, and sharp enough to actually be refreshing.
