Grapefruit Rosemary Soda

Ingredients
- 3 oz fresh grapefruit juice
- 0.25 oz rosemary syrup
- 4 oz soda water
- 3 drops saline solution or a pinch of salt
- Rosemary sprig and grapefruit wheel, to garnish
Method
- 1Fill a highball glass with ice.
- 2Add the grapefruit juice, rosemary syrup and salt, and stir.
- 3Top with soda water.
- 4Slap a rosemary sprig against your palm and add it with a grapefruit wheel.

Notes
- The salt is doing the heavy lifting — it turns grapefruit's bitterness from harsh into pleasant.
- Pink grapefruit is sweeter and more forgiving than white.
