Peach Iced Tea
Real peach and real tea, not syrup from a bottle. Makes a jug that disappears fast.

Ingredients
- 6 cups strong brewed black tea, cooled
- 3 ripe peaches, sliced
- 0.5 cup fresh lemon juice
- 0.33 cup honey or simple syrup
- Mint and peach slices, to garnish
Method
- 1Muddle two of the peaches with the honey in the bottom of a large pitcher.
- 2Add the cooled tea and lemon juice and stir well.
- 3Add the remaining sliced peach and refrigerate at least 2 hours.
- 4Serve over ice with mint and a peach slice.

Notes
- Cold-brew the tea overnight for a smoother, less bitter base with no effort.
- Ripe peaches only — underripe ones give you colour but no flavour.
- Frozen peach slices work out of season and chill the jug as they thaw.
