Spiced Hot Chocolate
Made with real chocolate and a little chilli. The drink to hand people at a December party.

Ingredients
- 2 cups whole milk (or oat milk)
- 3 oz dark chocolate, chopped
- 1 tbsp cocoa powder
- 1 tbsp sugar, to taste
- 0.5 tsp ground cinnamon
- Small pinch of cayenne
- Pinch of salt
- Whipped cream, to serve
Method
- 1Warm the milk gently with the cocoa, cinnamon, cayenne and salt, whisking until smooth. Don't let it boil.
- 2Take it off the heat and add the chopped chocolate, whisking until it melts completely.
- 3Taste and add sugar as needed — it depends entirely on your chocolate.
- 4Pour into warmed mugs and top with whipped cream and a dusting of cinnamon.

Notes
- Real chopped chocolate, not just cocoa powder, is what makes it thick rather than watery.
- The pinch of salt and the cayenne both make the chocolate taste more like chocolate.
- Warm the mugs first — it stays hot noticeably longer.
