Virgin Daiquiri

Lime and sugar in balance. The simplest sour there is, and a good test of whether your lime is fresh.

Ingredients

  • 1 oz fresh lime juice
  • 0.75 oz simple syrup
  • 2 oz cold water or non-alcoholic white spirit
  • Pinch of salt
  • Lime wheel, to garnish
  • Ice

Method

  1. 1Chill a coupe glass.
  2. 2Add all the ingredients to a shaker with plenty of ice.
  3. 3Shake hard for 15 seconds — harder and longer than feels necessary.
  4. 4Double-strain into the chilled coupe and garnish with a lime wheel.

Notes

  • This drink is only lime and sugar, so bottled lime juice ruins it completely. Squeeze it fresh.
  • The pinch of salt rounds off the sharp edge and makes the whole thing taste fuller.
  • For a frozen version, blend with a cup of ice and serve immediately.
