Ingredients

  • 2 oz passion fruit juice or purée
  • 1 oz fresh orange juice
  • 0.75 oz fresh lime juice
  • 0.5 oz grenadine
  • 0.5 oz simple syrup
  • Orange slice and a cherry, to garnish

Method

  1. 1Add everything except the grenadine to a shaker with ice and shake for 12 seconds.
  2. 2Strain into a hurricane glass filled with fresh ice.
  3. 3Pour the grenadine slowly down the inside so it settles and gives the drink its sunset gradient.
  4. 4Garnish with an orange slice and a cherry.

Notes

  • Passion fruit is doing the work — use real juice or purée rather than a syrup if you can.
  • Add the grenadine last and slowly, or you lose the layered look entirely.
  • Scales well to a jug for a party; hold the grenadine until serving.

Make one of these next

  • Virgin Cosmopolitan

Cranberry, lime and orange, shaken hard and served up. Looks the part and tastes sharp rather than sweet.

  • Virgin Mai Tai

Almond, lime and orange over crushed ice. Tiki's best drink, and the almond is what people actually taste.

  • Blackberry Basil Smash

Muddled fruit and herbs, sharp with lemon. Looks impressive and takes five minutes.
