Lavender Lemonade

Floral, tart and pale purple. Restrained lavender is the difference between a drink and a bar of soap.

Ingredients

  • 1 cup fresh lemon juice (about 5 lemons)
  • 0.75 cup lavender syrup
  • 3 cups cold water
  • Lemon wheels and lavender sprigs, to garnish
  • Ice

Method

  1. 1Make lavender syrup: warm 1 cup sugar with 1 cup water and 1 tbsp dried culinary lavender, stir until dissolved, then steep 20 minutes and strain.
  2. 2Combine the lemon juice, syrup and cold water in a pitcher.
  3. 3Taste and adjust — lemons vary a lot.
  4. 4Serve over ice with a lemon wheel and a small lavender sprig.

Notes

  • Steep the lavender for 20 minutes, not longer. Over-steeped lavender tastes like perfume and there's no fixing it.
  • Use culinary lavender, not the ornamental kind from a garden centre.
  • A splash of soda turns this into a spritz.
