Elderflower Cucumber Spritz

Ingredients
- 1 oz elderflower cordial
- 0.5 oz fresh lemon juice
- 4 slices cucumber
- 4 oz soda water or non-alcoholic sparkling wine
- Cucumber ribbon and mint, to garnish
Method
- 1Press the cucumber slices gently in the bottom of a wine glass.
- 2Add the elderflower cordial and lemon juice, and fill with ice.
- 3Top with soda water or sparkling wine.
- 4Garnish with a cucumber ribbon and a mint sprig.

Notes
- Press the cucumber, don't muddle it — hard muddling gives a vegetal, bitter edge.
- Elderflower is strong. An ounce is plenty; more and it takes over.
- A ribbon of cucumber run down the inside of the glass looks far better than slices.
