Pineapple Ginger Cooler
Sharp, tropical and warming at once. The ginger stops the pineapple from being merely sweet.

Ingredients
- 3 oz pineapple juice
- 0.5 oz fresh lime juice
- 0.5 oz ginger syrup
- 3 oz soda water
- Pinch of salt
- Pineapple wedge and candied ginger, to garnish
Method
- 1Add the pineapple juice, lime, ginger syrup and salt to a shaker with ice.
- 2Shake hard for 10 seconds — pineapple juice froths, and the foam is what makes this feel finished.
- 3Strain over fresh ice in a highball glass and top with soda.
- 4Garnish with a pineapple wedge and a piece of candied ginger.

Notes
- Shake it. Pineapple juice builds a head that a stirred version never gets.
- Fresh pineapple juice is a large upgrade here, but tinned works if you add extra lime.
- A pinch of chilli on the rim is a genuinely good addition.
