Strawberry Lemonade
Real macerated strawberries rather than syrup, and sharp enough to be worth drinking.

Ingredients
- 2 cups hulled strawberries
- 0.5 cup sugar
- 1 cup fresh lemon juice
- 4 cups cold water
- Pinch of salt
- Lemon wheels and strawberry halves, to garnish
Method
- 1Toss the strawberries with the sugar and leave them for 20 minutes — they'll release their own syrup, which is far better than boiling them.
- 2Blend, then strain through a sieve, pressing to get everything out.
- 3Combine with the lemon juice, cold water and salt in a pitcher.
- 4Chill and serve over ice with lemon and strawberry.

Notes
- Macerating rather than cooking keeps the fresh strawberry flavour; heat turns it into jam.
- Slightly soft strawberries are better here than firm ones.
- Add basil to the maceration for a version that tastes considerably more grown-up.
