Thai Iced Tea
Strong spiced black tea over ice with condensed milk poured through it. Sweet, and worth it.

Ingredients
- 4 cups water
- 4 tbsp Thai tea mix (or strong black tea with a star anise and 2 crushed cardamom pods)
- 3 tbsp sugar, to taste
- 4 tbsp sweetened condensed milk
- 2 tbsp evaporated milk, to finish
Method
- 1Bring the water to the boil, add the tea and spices, and steep for 5 minutes.
- 2Strain, stir in the sugar while hot, and cool completely.
- 3Fill tall glasses with ice and pour the tea over.
- 4Stir the condensed milk into each glass, then float evaporated milk on top for the layered look.

Notes
- Steep it much stronger than you would drink hot — ice and milk both dilute it heavily.
- Cool the tea fully before adding ice or you'll end up with a watery glass.
- Pour the milk over the back of a spoon for the cloud effect it's known for.
