Virgin Bloody Maria
A Virgin Mary with smoke and heat. Better than the original if you like chilli.

Ingredients
- 4 oz tomato juice
- 0.75 oz fresh lime juice
- 0.25 tsp chipotle powder or a dash of chipotle hot sauce
- 2 dashes Worcestershire sauce
- Pinch of smoked salt
- Pinch of black pepper
- Lime wedge, pickled jalapeño and celery, to garnish
Method
- 1Rim a highball glass with smoked salt and chilli powder, if you like.
- 2Fill with ice and add all the liquid ingredients and seasonings.
- 3Roll the drink between the glass and a shaker tin three times — never shake tomato juice.
- 4Garnish with lime, a pickled jalapeño and celery.

Notes
- Lime rather than lemon is what separates a Maria from a Mary.
- Chipotle gives smoke as well as heat, which is what the tequila used to contribute.
- Pickle brine adds depth if it tastes flat.
