Watermelon Agua Fresca
Blended watermelon, lime and a pinch of salt. The most refreshing thing you can make in summer, in four minutes.

Ingredients
- 4 cups cubed watermelon, seeds removed
- 2 cups cold water
- 1 oz fresh lime juice
- 1–2 tbsp sugar or agave, to taste
- Generous pinch of salt
- Mint and lime wheels, to garnish
Method
- 1Blend the watermelon with 1 cup of the water until completely smooth.
- 2Strain through a fine sieve into a pitcher, pressing the pulp to get everything out.
- 3Stir in the remaining water, lime juice, sweetener and salt.
- 4Chill for an hour and serve over plenty of ice with mint and a lime wheel.

Notes
- The salt is what makes it taste like watermelon instead of pink water. Don't skip it.
- Ripe watermelon may need no sugar at all — taste before adding any.
- A jalapeño slice steeped for ten minutes then removed gives a gentle heat that works beautifully.

A light Mexican drink of blended fruit, water, a little sugar and lime. It's thinner than a smoothie and far less sweet than juice, which is why it's so drinkable in heat.
