Watermelon Juice Cooler
Three ingredients, no equipment beyond a blender, and the best thing to drink in real heat.

Ingredients
- 4 cups cubed seedless watermelon, chilled
- 1 oz fresh lime juice
- Generous pinch of salt
- Mint sprig and a lime wheel, to garnish
- Ice
Method
- 1Blend the watermelon until completely smooth — no water needed, it's already 92% water.
- 2Strain if you want it clear; leave it if you don't mind the texture.
- 3Stir in the lime juice and salt.
- 4Pour over ice and garnish with mint and lime.

Notes
- The salt is not optional. Without it this tastes like pink water; with it, it tastes intensely of watermelon.
- Freeze watermelon cubes and blend them straight for a slushy version.
- A few basil leaves in the blender is a genuinely good addition.
