Coconut Lime Cooler
Creamy without being heavy, and dairy-free. A piña colada's lighter, less sweet cousin.

Ingredients
- 3 oz coconut water
- 1 oz coconut milk
- 0.75 oz fresh lime juice
- 0.5 oz simple syrup
- Pinch of salt
- Lime wheel and toasted coconut, to garnish
Method
- 1Add everything to a shaker with ice.
- 2Shake hard for 12 seconds to emulsify the coconut milk.
- 3Strain over fresh ice in a highball glass.
- 4Garnish with a lime wheel and a sprinkle of toasted coconut.

Notes
- Coconut water and coconut milk together give you flavour and body without the heaviness of cream of coconut.
- Toasting the coconut garnish in a dry pan for a minute changes the whole drink's aroma.
- Shake hard or the coconut milk separates in the glass.
