Virgin Piña Colada
Pineapple, coconut and ice, blended properly so it comes out creamy instead of watery.

Ingredients
- 3 oz pineapple juice
- 1.5 oz cream of coconut (not coconut milk)
- 0.5 oz fresh lime juice
- 1 cup ice
- Pineapple wedge and a cherry, to garnish
Method
- 1Add the pineapple juice, cream of coconut, lime juice and ice to a blender.
- 2Blend on high for about 30 seconds, until completely smooth with no ice shards left.
- 3Pour into a chilled hurricane or tall glass.
- 4Garnish with the pineapple wedge and cherry.

Notes
- Cream of coconut and coconut milk are not interchangeable. Cream of coconut is sweetened and thick — it's what makes the drink a piña colada rather than a smoothie.
- Frozen pineapple chunks in place of some of the ice give you a much thicker drink without diluting it.
- The lime isn't traditional, but without it the drink is flat and cloying.
Common questions
Can you make a piña colada without alcohol?
Yes — the drink is mostly pineapple juice and cream of coconut, and the rum contributes very little flavour. A virgin version tastes close to the original, especially with a little lime to cut the sweetness.
