Pomegranate Ginger Fizz

Ingredients
- 2 oz pomegranate juice
- 0.5 oz fresh lime juice
- 4 oz spicy ginger beer
- Pomegranate seeds and a lime wedge, to garnish
Method
- 1Fill a highball glass with ice.
- 2Add the pomegranate and lime juice.
- 3Top with ginger beer and stir once from the bottom.
- 4Float pomegranate seeds on top and add a lime wedge.

Notes
- Pomegranate juice is tannic, which is exactly why this tastes structured rather than sweet.
- Use a properly spicy ginger beer; a sweet one leaves the drink with nowhere to go.
- The seeds are worth the effort — they keep releasing flavour as you drink.
