Ingredients
- 3 oz cloudy apple juice
- 0.5 oz fresh lemon juice
- 0.5 oz cinnamon syrup
- 2 oz soda water
- Freshly grated nutmeg and an apple slice, to garnish
Method
- 1Add the apple juice, lemon juice and cinnamon syrup to a wine glass filled with ice.
- 2Stir to combine.
- 3Top with soda water.
- 4Grate nutmeg over the surface and add an apple slice.

Notes
- Cloudy apple juice has far more flavour than clear — it's worth seeking out.
- Make cinnamon syrup by steeping three broken sticks in simple syrup for an hour. It keeps for weeks and improves every autumn drink you make.
- Scales easily: multiply by the number of guests, mix everything except the soda ahead, and top each glass as you pour.
