Strawberry Mint Cooler
Sweet, sharp and cold. Uses up strawberries that are slightly past their best.

Ingredients
- 4 strawberries, hulled
- 6 mint leaves
- 0.75 oz fresh lime juice
- 0.5 oz simple syrup
- 3 oz soda water
- Pinch of salt
Method
- 1Muddle the strawberries with the lime juice and syrup in a shaker.
- 2Clap the mint between your palms and add it with the salt and ice.
- 3Shake for 10 seconds.
- 4Double-strain over ice, top with soda, and garnish with a strawberry and mint sprig.

Notes
- Slightly overripe strawberries are better here than perfect ones — more sugar, more aroma.
- Balsamic vinegar, a quarter teaspoon, is a classic strawberry pairing and works.
- Double-strain or you'll be chewing your drink.
