Virgin Bellini

Ingredients
- 2 oz white peach purée, chilled
- 4 oz non-alcoholic sparkling wine or sparkling water
- Dash of fresh lemon juice
Method
- 1Chill the flute and both ingredients thoroughly — this drink is unforgiving when warm.
- 2Spoon the peach purée into the bottom of the flute.
- 3Add the dash of lemon juice.
- 4Top slowly with the sparkling wine, pouring down the side of the glass, and stir once gently.

Notes
- White peaches, not yellow — it's the original and the flavour is more delicate.
- Frozen peaches blended with a splash of water make a fine purée out of season.
- Pour slowly. Poured fast, the purée foams up and over the rim.
