Ingredients

  • 3 oz non-alcoholic sparkling wine or sparkling water
  • 2 oz fresh orange juice, chilled
  • Orange twist, to garnish

Method

  1. 1Chill the flute and both ingredients — a warm mimosa is a flat mimosa.
  2. 2Pour the sparkling wine into the flute first.
  3. 3Add the orange juice slowly. Juice first makes it foam over.
  4. 4Garnish with an orange twist.

Notes

  • Sparkling first, juice second. This is the whole technique.
  • Fresh-squeezed is a bigger upgrade here than in almost any other drink, since there are only two ingredients.
  • Blood orange juice makes a striking version in winter.

Common questions

What is the ratio for a mimosa?

Traditionally equal parts, but 3:2 in favour of the sparkling gives a lighter, drier drink. Chill everything first and pour the sparkling in before the juice.

Make one of these next

  • Virgin Bellini

Peach and sparkling, two ingredients. The easiest thing to hand someone at a brunch or a toast.

  • Cranberry Orange Spritzer

Tart, bright and barely sweet. Two minutes, and it looks like an occasion.

  • Cranberry Rosemary Spritz

Tart, herbal and festive. The drink to make when you want something that looks like an occasion.
